oh shit, you have to keep it in the fridge?   Seriously, I buy pig skin at the local butcher shop and cook it down, I get manteca and chicharones.  I make some kick ass tamales from scratch.  The only things I don't make are the olives and pork,  I'm really not into fucking animals.  As we've seen from Russia, human/animal couplings really don't produce the best results.

Not if you're just using it to grease your pans with.  If you're making biscuits with it, though, it really helps to have it in the fridge so it's solid enough to cut into the flour.

I used to be a professional cook,  I enjoy it more now, since I don't have to do it for a living.  The in-laws, (Mexican origin) all say I make pretty good tamales for a white boy...

Mmm.  Back in my church-goin' days we went down to Ejido Sonora in northern Mexico to help out a local church there and they threw us a party.  There really is no substitute for real manteca in the tortillas.
