The fact that it's mislabeled means you're paying a lot more for it.  These high end scraps used to be made into high quality hamburger.  It makes me wonder if modern hamburger is at least partially made from the crap that used to go to the dog food factory.  If so, this may be why dog food is now full of corn meal and soy, with a few ground up eyeballs and buttholes for flavor.

It's dangerous because beef can easily become contaminated with feces and undesirable bacteria during the butchering process. It is much safer to have a large cut of beef which you then use to cut off individual steaks. Only the outside of such a product would have the potential for contamination when butchering. During the cooking process, the outside gets cooked to a temperature which would kill any harmful bacteria. I've always thought pig and cow buttholes were ground up for pet food and the ass flora they contain got sterilized during the canning process.  I hope the pigs asses are being sent to Muslim countries for the faithful to consume.

They're sold for Chinese food, mostly dim sum, or gyoza as they're known in Japan. In the States such delicacies are reserved to make our sausages, hence the ancient reference to the pigs and assholes that make our laws. The thing I like most about this pic is not that many cooks prefer to use pork rectums for their savory characteristics, but that they would specifically prefer 'inverted' boneless pork rectums.

On a final note, it cheers me no end that saying 'Rick Santorum For President' is impossible without 'Pork Rectum'.

Congratulations!  My stomach is starting to do the Rumba because of all the times I’ve had dim sum or gyoza.  Sausage doesn’t freak me out so much because I would like to believe the casing has been inverted and thoroughly cleaned before being stuffed.

Actually, apart from the Haggis and Hog Jowls, I really *do* like the other things.  I don't eat them very often, as most are horrid for your system, but they're tasty IMHO.  I particularly like beef tongue on rye with mustard... yum.

Cow tongue is one of the sublime meats. But if you still see taste buds, it hasn't been peeled correctly. A little mustard with horseradish, dark rye bread and some sprouts and you have a thick slice of mana.

I have no problem with consuming ALL parts of the animal. To do otherwise is to be wasteful. But label it appropriately and let the consumer decide.

Tongue used to be cheap, but over here it's at a premium. But stew a tongue or two in one pot and oxtails in another, then combine and reduce the broths makes a beef stock worthy of the effort!
