There is some serious nuggets of wisdom there.
It is this reporter's opinion that the best sauce for coon may very well be hunger.

Racoons are quite intelligent, and can make interesting if somewhat dangerous pets.

Nice link. I haven't eaten raccoon but I have eaten opossum. It tends to smell far worse cooking than it actually turns out to taste, but it's definitely not on my list of favorite game.
