I remember being told in a college anthropology class (back in the previous century, this was) that a) nearly all of the skeletons you see in classrooms are real human skeletons because it's actually more expensive to make a replica than to buy the real thing; and b) most of these skeletons come from South/SE Asia. I expect boiling is the best way to separate the tissue from the bones.
