It's true that grammarians would have you say "He is eaten up with the dumb-ass" but then again a grammarian wouldn't say that himself for any reason. More usually people, especially those in the South, might venture the opinion that "He's ate up with the dumbass" but since only those near the bottom of the gene pool for whom ignorance is a virtue utter such nonsense in daily life the proper phraseology is "He eat up wit' de dumbass" or even "He eat up."
